If you are part of the Ultimate Blog Party (click icon above if you haven’t heard of this Party before), welcome! This blog captures my musings on being a mama to my son, Colin, whom we adopted from Russia in December 2008.   Seeing the world anew through his eyes makes each day an adventure!

My blog touches on the challenges of adoption (the process and parenting) as well as the blessings. We are now in the process of adopting a daughter through domestic (U.S.) adoption. I also openly share about the infertility that God used to turn our hearts to the miracle of adoption. I occasionally do book and product reviews and give my two-cents-worth as a former elementary education teacher and mama who loves to bake and help keep my family healthy. I’m an aspiring photographer who hopes to focus on celebrating family through my photography.

Heather’s Cinnamon Chip Scones

2 1/2 cups flour
4 tsp baking powder
2 Tbs sugar

1/4 tsp salt
1 tsp cinnamon
1/3 cup butter, cut into pieces

1 beaten egg

3/4 cup milk

1 cup to 1 bag cinnamon chips (about) Hershey 10 oz. (depends on your preference)

about 1 TBS of sugar and 1 TBS of cinnamon mixed together

In a medium bowl, combine flour, the 2 tablespoons sugar, the baking powder, and salt.  Using a pastry blender or fork, cut in butter until mixture resembles coarse crumbs.  Make a well in center of flour mixture and set aside.

In a medium bowl, combine egg and milk.  Add egg mixture all at once to the flour mixture.  Using a fork, stir just until barely moistened; mix in desired amount of cinnamon chips.

Turn dough out onto a lightly floured surface.  Knead dough by folding and gently pressing dough for 10 to 12 strokes or until dough is nearly smooth.  Pat or lightly roll dough into an 8-inch circle.  Cut into 8 wedges (or divide and place in a greased scone pan).

Place wedges 1 inch apart on an ungreased baking sheet.  Brush wedges with milk and sprinkle with cinnamon/sugar mixture.  Bake in a 400 degree oven for 12 to 20 minutes or until golden.  Remove scones from baking sheet or pan; serve warm.

    Scones!! Yummy. I just did a book review on a family who adopted a little girl from Thailand and they had to release her a few years later. It was such a hard story to read. So, SO happy you have been blessed by your son and will be twice blessed with your daughter!! Visting from UBP10.

    I wanted to let you know our #1 reason for deciding on the circ. for Joshy was because he has an older brother who is and lots of male cousins we are very close to who all are. We did not want him to feel different from the rest of the family. I agree and don’t think it’s a big deal either way. I know you were interested in peoples reasons and I had not expressed our primary reason;)

    My cousin adopted a child from Russia a couple of years ago, they were working in Moskow when they came across the orphanage where she was. It took them over a year to be able to bring her home to Canada and he works for the Canadian Government!
